Fried Green Tomato BLT's



Fried Green Tomato BLT’s

This is the perfect way to use your unripe tomatoes at the end of the summer, or use your Green Zebra tomatoes.

Fried green tomatoes
4 tablespoons vegetable oil
2 green tomatoes
1 egg
1 cup all purpose flour
1 cup corn meal
sea salt and fresh ground pepper
½ teaspoon cayenne pepper

Sandwiches
4 slices thick cut apple-wood smoked bacon
4 slices country white bread
4 table spoons Best Foods Mayonnaise
8 slices fried green tomatoes
2 large pieces butter lettuce

To make the fried green tomatoes: Slice 2 large green tomatoes into ½ inch slices (approximately 8 slices). Lay tomato slices on a paper towel to absorb any excess moisture. In a medium bowl whisk one egg. Add a pinch of salt, pepper and cayenne. Set aside. In another medium bowl add 1 cup of flour. Add a pinch of salt, pepper and cayenne. Set aside. In a third medium bowl add 1 cup corn meal. Add a pinch of salt, pepper and cayenne pepper. To bread green tomato slices dust each slice with flour, dip in egg and then dust with cornmeal.
Heat 4 tablespoons vegetable oil in large frying pan on medium high. Fry the breaded tomatoes over medium high heat in two batches. Lay on paper towels to absorb excess oil. Set aside.

To make sandwiches: Heat oven to 375. Line baking pan with foil, lay bacon in one layer on sheet pan and bake in oven until bacon is crispy. Approximately 10 minutes. Lay cooked bacon on paper towel to drain.
Spread 4 pieces of bread with a layer of mayonnaise. Top two slices of the bread with bacon, tomatoes and lettuce, dividing them evenly. Place the other two slices of bread on top. Cut sandwiches in half and serve immediately.
