Jennifers Carmelized Onion Dip

adapted from Ina Gartens recipe

Caramelized Onion Dip

Makes ~2 cups
  • 2 large yellow onions
  • 4 tablespoons unsalted butter
  • 1/4 cup vegetable oil
  • 1/4 teaspoon ground cayenne pepper
  • a good sprig of thyme
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 4 ounces cream cheese, at room temperature
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise

Dice onions, 1/4", about 3 cups. Heat butter & oil, in large saute pan over medium heat, add onions, cayenne, salt, pepper & thyme, saute ~10 minutes, then reduce heat to med-low & cook, stirring occasionally until onions are browned & caramelized. Remove sprig of thyme.

Beat cream cheese, sour cream & mayo with mixer until smooth.  Add onions, mix well. Adjust seasoning, if needed.  For a smoother dip, process in a food processor in 1 second intervals until desired texture is reached.
