Padrón Peppers: These
peppers are small and range in color from bright green to yellow. Most are
mild, but every so often you might bite into a wickedly hot one!
Fushimi
Peppers: Usually about 6 inches in length, these Japanese peppers turn glossy
red when ripe but are most often used in their green stage. They are
thin-walled and sweet. Fantastic when cooked in stir-fry, tempura, or on the
grill!
Hungarian
Peppers: Similar to the Banana Wax Pepper, these are creamy-yellow translucent
color with thin skin and thick flesh in their immature stage. Their flavor is
sweet and ranges from warm to moderately hot. As the pepper matures, its color
changes to hues of orange-red and the heat rises significantly as the pepper
retains its sweetness.
